Ingredients

Garlic cloves, bird's eye chili pepper or other chili peppers, Sichuan peppercorn, salt, sugar

Instructions

1. Wash the red chili peppers and remove the stems before steaming them for 5 minutes. After cooling, chop them finely with a knife. The ratio of chili peppers to garlic should be 2:1.

2. Heat the oil in a pan and add Sichuan peppercorns. Stir-fry over low heat until fragrant, taking care not to burn them. The ratio of chili peppers to Sichuan peppercorns should be 10:1.

3. Pour the chopped chili peppers into the pan and stir-fry over low heat until the chili sauce becomes sticky. Add salt and sugar to taste.

4. Add the minced garlic, and stir-fry until fragrant.
